Do you like easy made waffles? How about breakfast?

To be honest, until a few years ago, or more precisely until I met my husband, for me the words ‘breakfast’ and ‘waffles’ just did not belong together. You see in Germany you eat waffles like you eat cake. In the afternoon with coffee or tea on a Sunday. Then along came David and this weird idea to have waffles for breakfast. Being that I am usually starving by the time that he gets up, plus I am always game to try something new, I fairly quickly agreed. Ever since we have had breakfast waffles whenever the mood strikesย us.

After not having had waffles in a while, we both agreed that this should be our start into 2016. And so we had breakfast waffles on New Year’s Day. Of course, I took a few pictures. Then it occurred to me that while I had posted photos these waffles on social media before, I actually have neverย shared David’s special recipe before. Because, you know, he is the master of these tasty and crunchy, never soggy beauties. David usually has his with butter, powdered sugar and freshly pressed lemon juice, whereas I will have them with maple syrup (Trader Joe’s Grade B is my favorite!). But why not try something different and have them with some fresh fruit or, like I used to in Germany, simply with some yummy jam.

David's "improved" recipe substitutes a little corn meal for the original flour.

Serves: 10 - 12
Ingredients
  • 2 cup flour
  • ¼ cup corn meal
  • 4 teaspoon baking powder
  • ¾ teaspoon salt
  • 1½ table spoon sugar
  • 2 beaten eggs
  • 2¼ cup milk
  • ¾ cup salad oil
Instructions
  1. Sift together dry ingredients
  2. Combine remaining ingredients
  3. Add just before baking
  4. Beating only till moistened
  5. Bake in preheated waffle oven until golden brown

  1. Looks so good! Never thought of adding cornmeal to waffles. Do you add it to pancakes too? I cannot eat them now but man I used to love them. Great pictures.

    • Me neither! Corn meal was practically unknown in Germany (like corn on the cob, too) when I grew up. We actually don’t make pancakes – hahaha – whenever we feel like something sweet on our weekend breakfasts it is… OH BOY WAFFLES ๐Ÿ™‚
      If you don’t mind my asking – how come you cannot eat them now? Gluten?

      • yes, developed gluten and other sensitivities over time, now to the point that if I eat it I get bad joint pains for 24-48 hours. Now, I will cheat now and again because there is so much good food that I miss out on. I have not found the gluten free stuff in the stores to be that great. They are saying that more and more people will be getting this kind of sensitivity due to our bodies not being able to “endure” the processed foods and the modified grains we are eating. Ay yi yi.

        • These ‘modern world issues’ are really pretty scary. Who knows what we are doing to ourselves and what comes out of it in the long run.
          Personally I developed a bit of a dislike to all the gluten-free craze going on at the moment. If you have the sensitivity or even celiac, then it’s what you have to do, but if you don’t…. I have friends and family who have a lot of food sensitivities and it is so.no.fun. OTOH it is good that there are now so many alternatives, albeit not all of them taste like the real deal (I know we are working on a gluten free pizza that supposedly tastes pretty good :))

  2. It’s funny because I’m a savory breakfast person. Big sweet tooth here, as you probably know, but breakfast for me is more of a bacon, eggs, potatoes, toast type of thing.
    My family, however, is full of waffles people. We have several wafflers and recipes. I’ve never done the cornmeal one, though!

    • Mmmhmm, peach waffles… sounds good. Now that you mention it, I used to make apple waffles and pancakes back in Germany. You know, just throw a few cut up pieces into the batter and then fry/bake it. Put some sugar and cinnamon on top – soooo good.

  3. I definitely prefer waffles to pancakes! We had a couple of big waffle breakfasts over the holidays, and my hubby is the breakfast cook around here. I sit and drink my coffee and Bailey’s – LOL. But we definitely have fresh Canadian maple syrup on ours — right from my aunts own sugar maple bush usually. The.Best. And I like mine with some fruit. And then of course we have the eggs and bacon too! Oh yes, do it big or go home. Although, we normally would not eat a lunch on big breakfast days like this. I’ll have to share your recipe with my honey.

      • My aunt and uncle have a sugar maple bush and they tap the trees each winter, than boil the sap into syrup. There’s a whole system including a log cabin in the woods that we kids used to go sleep in overnight. Because you have to check the boiler, etc. throughout the process. And.. it was just hella fun. ๐Ÿ™‚

  4. This sounds amazing! Sometimes we get lazy and just buy the storebrand already made. These would certainly be a lot healthier for the kiddos! Best wishes in 2016. Fantastic pictures too!

  5. Hi Claudia, I enjoy waffles, but can’t imagine having them for breakfast (the seed has been planted now!). I don’t make them often as the recipe I have is quite complicated with folding in stiffened egg whites. Davids recipe seems so much easier than the one I have, so I’ll be giving it a try for sure.

    • Hi Debbie, that’s right, you’re living in Europe, so you know what I am talking about ref. waffles for breakfast – hahaha. Well, it is different, I give you that. But if you like sweet, then it will work. And, yes, they are definitely easy ones. You know, in the morning you don’t want to have to think too much, right?! ๐Ÿ™‚
